White Chocolate Raspberry Cheesecake Bars

Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted

For the Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup white chocolate Hip Syrup
  • 1/2 cup Raspberry Hip Syrup
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

For Garnish:

  • Fresh raspberries
  • White chocolate shavings
  • Powdered sugar (optional)

Instructions

  1. Preheat the oven
    Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving a bit of overhang for easy removal.

  2. Make the crust
    In a bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of the prepared baking pan to form a crust. Bake for 8–10 minutes, then let cool.

  3. Prepare the filling
    In a medium bowl, beat the cream cheese, White Chocolate & Raspberry Hip Syrup, and sugar until smooth. Add the egg and vanilla extract, mixing until just combined.

  4. Assemble the bars
    Pour the cream cheese mixture over the crust, spreading it evenly. 

  5. Bake
    Bake for 20–25 minutes, or until the center is just set. Remove from the oven and let cool to room temperature before refrigerating for at least 2 hours.

  6. Cut and garnish
    Once chilled, lift the bars out of the pan using the parchment paper overhang. Cut into squares and garnish with fresh raspberries, white chocolate shavings, and a dusting of powdered sugar if desired.
